Memorial Day Treat: Pancakes with Berries & Coconut Cream

First of all, I want to thank all of the Veterans and their families.  I honor those who have made the ultimate sacrifice and given their lives, and recognize that each and every military person is volunteering to do the same and I respect that too.  A very special thanks is due to my Matty, who served in the USMC.  Every day I am proud to be your wife.

We are big into pancakes on the weekends.  Some may even call us fanatics.  We have tried many topping and filling combos between fruit, chocolate, and grains.  Our all time favorites are Chocolate Chip and Banana Pancakes.  They are simply amazing.  This weekend we tried something new, well, sort of new.  You see, I am allergic to dairy products so it has been about 10 years since I’ve had pancakes or waffles with whipped cream on them.  So this morning, I decided to whip up my new favorite dairy free whipped cream recipe and toss some strawberries on top, for an alternative-take on the ol’ classic.  The result was more magical than I could have imagined!  (**I originally got the idea for the coconut cream recipe on Pinterest via The Nutty Kitchen.)

What you’ll need for the coconut whipped cream:

1 can (fatty) coconut milk (needs to be refrigerated for a few hours beforehand)
dash o’ cinnamon
1/2 t. pure vanilla extract
honey to taste

Open the refrigerated can of coconut milk and notice that the fat has separated from the liquid, which is why it will only work if it’s been chilled.  Now you are going to scoop out the fat and put it into a separate mixing bowl.  I usually save the liquid and use it in a smoothie or something.

Add the cinnamon, vanilla and honey.  Beat it until it begins to fluff up and there are no more lumps.

It should look something like this…Isn’t she beautiful?!  And she tastes even better.

Make some pancakes, from a mix or from scratch.  I can’t advise you in this area because I use Bob’s Red Mill GF Pancake Mix.  I’m lazy like that.

I used frozen strawberries, that was all I had on hand, but I think fresh would be even better.

The final product…OMG…A little piece of heaven for sure.
